A web exclusive to the PBS documentary In Defense of Food takes a look at
broccoli research being conducted by Thomas Björkman, horticulture professor at Cornell University. Björkman and the Eastern Broccoli Project are breeding new varieties of broccoli that thrive in the eastern climate, aiming to reduce the demand for the vegetable grown and shipped from California.

“We’re hoping that having a fresher product with less transportation time might actually make a broccoli that tastes better to people and that they’ll eat more of it,” Björkman said.
