According to Food Availability Data from the USDA, Economic Research Service, legumes, dark greens, and red and orange vegetable have expanded their shares of total U.S. vegetable availability over the last 20 years.

- Legumes: dry edible beans, dry peas.
- Dark green; broccoli. collard greens, escarole, kale, mustard greens, romaine and teat lettuce, spinach, turnip greens
- Other vegetables, artichoke, asparagus, beets. brussels sprouts, cabbage. cauliflower, celery. cucumbers, eggplant, garlic, head lettuce, okra, onions, radishes, snap beans. squash.
- Red and orange-S/Cas: bell peppers, carrots, chilli peppers. pumpkin, sweet potatoes. Starchy excluding latoes: green peas, lima beans, sweet corn.
